    Default Spring in hawaii


    Spring has come to Hawaii and the fishing is turning on. Got this mahi and 10 more on saturday.

    Picked up an ono and another mahi last wednesday.

    Got a dozen more the week before that.

    Inshore has been good as well, got this papio on the 6wt.

    Very cool Don! Man, you're eating hella good.

    How do you prepare the mahi and ono? Ceviche?

    Damn I'm hungry now and I just had lunch.

    Thanks Eric, I cook fish all types of ways. Last night mahi ceviche and the tortilla crusted mahi and salsa. I grind up tortilla chips and use an egg wash and fry the mahi. It is like a fish taco, but mostly fish. Some mango salsa and cilantro and dirty rice and good to go. Ono is good ceviche as well, I like it sauteed or tempura style with sweet and sour sauce. It also makes great sashimi. Just don'e overcook the ono. Hope to get some more this weekend.

    Damn it, now I’m hungry! I do love me some Ceviche! I have to say though, one of my all time favorite meals was in Hawaii: fresh Ahi seared with a light Panko/Macadamia nut crust with a little soy drizzled on afterwards. I’m jealous Don, looks like good times and good eats.
