Don't have any experiance with the Tarpon but I have a Pungo. Completely different but I haven't heard anything bad about the Wilderness line of kayaks. My pungo is very stable and seems to be well thought out.

I have the Wilderness Systems Tarpon 140 and absolutely love this boat. It is very stable and fast boat. I would highly recommend having the rudder installed. This will help you fight wind, current, keep you straight while paddling, and can be used to help turn against a fish. There is a lot of room for gear. I would recommend the 160 as it is a little faster and a bit higher riding boat. The 140 may get a little wet at your feet, but you can plug the scupper holes.

Please feel free to let me know if you have specific questions
